Ingredients
1 Choices Sourdough Baguette
5-6 large tomatoes
3 cloves of garlic
Handful of basil
2 tbsp of Earth's Choice Extra Virgin Olive Oil
2 tsp Maison Orphee Vinegar Red Wine
2x Choices Organic Mozzarella Cheese
1 tsp Nonna Pia's Classic Balsamic Reduction
Salt and pepper to taste
Directions
Instructions:
- Preheat the oven to 425°F.
- Dice the tomatoes, mince the garlic, and chop the basil.
- In a large bowl, combine the tomatoes, garlic, and basil. Add 2 tbsp of olive oil, red wine vinegar, and salt and pepper to taste. Set aside to marinate.
- Slice the baguette and drizzle with olive oil. Toast in the oven for about 5 minutes until lightly golden.
- Slice the mozzarella into your desired thickness, then use a ghost-shaped cookie cutter (or freehand with a knife) to cut out ghost shapes.
- Assemble the boo-schettas by topping each slice of bread with the tomato mixture and a slice of ghost-shaped mozzarella.
- For a finishing spooky touch, create ghost faces by using a toothpick dipped in balsamic glaze to add little eyes and mouths.
