Ingredients
1 Choices Sourdough Baguette
5-6 large tomatoes
3 cloves of garlic
Handful of basil
2 tbsp of Earth's Choice Extra Virgin Olive Oil
2 tsp Maison Orphee Vinegar Red Wine
2x Choices Organic Mozzarella Cheese
1 tsp Nonna Pia's Classic Balsamic Reduction
Salt and pepper to taste
Directions

Instructions:

  1. Preheat the oven to 425°F.
  2. Dice the tomatoes, mince the garlic, and chop the basil.
  3. In a large bowl, combine the tomatoes, garlic, and basil. Add 2 tbsp of olive oil, red wine vinegar, and salt and pepper to taste. Set aside to marinate.
  4. Slice the baguette and drizzle with olive oil. Toast in the oven for about 5 minutes until lightly golden.
  5. Slice the mozzarella into your desired thickness, then use a ghost-shaped cookie cutter (or freehand with a knife) to cut out ghost shapes.
  6. Assemble the boo-schettas by topping each slice of bread with the tomato mixture and a slice of ghost-shaped mozzarella.
  7. For a finishing spooky touch, create ghost faces by using a toothpick dipped in balsamic glaze to add little eyes and mouths.
